Course-ground yellow cornmeal, common to Italian kitchens and full of nutty corn flavor. Cook slowly with milk, stock or water, or any combination therein, and finish with sweet butter and a shave of parm. The course variety holds up well to robust sauces, alongside grilled sausages or with a fried egg and soft herbs.
