A combination of honeyed apricot flavor with the juiciness of a plum, the aprium has the best of both worlds. Similar in appearance to an Apricot, the fruit will have a slightly rosier color and the characteristic fuzzy skin. The flesh is sweet and juicy, with a balanced, slightly tart finish. Genetically, apriums are 75% apricot, and 25% plum. The aprium's juicy, delicate flesh is best enjoyed fresh, sliced over shortcakes with whipped cream, or pureed with a touch of lemon and sugar for a sublime dessert sauce.
