Edible at any stage, Yellow Gypsy Peppers are picked when young, yielding a sweet, yellow-green, conical-shaped pepper. If left to ripen they will deepen in color and grow sweeter in flavor. Thick walls make this a great pepper for stuffing and grilling. Tuck minced shrimp, cilantro and ginger into the cavity and grill.
