A delicate, lacy-leafed herb with profound flavor, the seed of which is known as coriander. A plant native to the Mediterranean, cilantro was widely used in Medieval European cuisine, but interestingly is more prevalent now in Asian, Middle Eastern, Indian and Latin American cuisines. Heat will diminish the flavor of the leaves somewhat, however Cilantro lends stunning, rich flavor to rice dishes and soups, and it marries well with fats, making to excellent in cream sauces, composed butters and guacamole.
