An antioxidant powerhouse, carrots are part of the Umbelliferae family, so named for the umbrella-like flower on top of the plant. Carrots are related to fennel, parsley, dill and anise in this respect. Long known to be excellent sources of beta-carotene and Vitamin A, carrots are also rich in antioxidants and minerals. Carrots may be found in a variety of colors, from the usual orange to deep reds and pale yellows. Only 3% of the beta-carotene in raw carrots is released during digestion. This can be increased with chopping and cooking, up to 39%. Carrots are excellent in both raw and cooked states, and are staples in diets world wide. Carrots may be julienned, grated, sliced or cubed for salads. They are excellent thinly sliced and deep fried for chips. Cooked carrots make terrific purees and soups, and their natural sweetness lends itself well to desserts.
