Milk, and its counterparts cream, half and half, butter and yogurt, have been a cornerstone of human nutrition for thousands of years. Essentially, man began to utilize milk as food beginning in the Neolithic period, when the domestication of animals and farming began to materialize. The U.S. is the world's number one producer of cow's milk, while India is the world's top producer of goat milk and buffalo milk, and China is the number one producer of sheep's milk. Different breeds of cow produce milk with different fat contents, with Jersey cows producing the highest percentage (thus Jersey cow milk being highly desireable for cheese and butter production). Cup for cup, whole milk generally contains 8 grams of fat, 2% has 5 grams, 1% has 2.5 grams and Nonfat has no fat. Protein levels remain about the same for all. Half and half will have between 10 and 18 percent fat content, whipping cream between 30 and 36 percent and heavy cream must contain at least 36 percent fat. Manufacturing cream must have a fat content of at least 40 percent.
