From the Basque country in Spain, Idiazabal is a rich, nutty sheep's milk cheese that is lightly smoked for 10 days, resulting in a lovely mellow smokey flavor. It is firm in texture, much like a Manchego, and with continued aging, will become increasingly firm and slightly more sharp in flavor. An excellent cheese for sauces, for stuffing peppers and for adding character to any cheese course. Sheep milk.
