Description

Perhaps the most beloved cheese to emerge from Italy after Parmigiano Reggiano, Burrata combines craftsmanship, flavor and utter decadence in each orb. Made by stretching warm mozzarella curds into a thin-skinned pouch, then filling with shreds of mozzarella and rich Italian cream (panna). The pouch is tied shut in a top-knot, and the most traditional versions are wrapped in asphodel leaves, the glossy green leaves being a sign of freshness. The flavor is the essence of milk and cream, fresh, unctuous and unforgettable. Water buffalo milk.
