Origin: Spain


Spain's famous blue, Cabrales is a sharp and distinctly assertive cheese flush with blue veining. Lactic with a pronounced finish and a dense, almost crumbly texture, Cabrales is generally a mixed-milk cheese, utlizing raw cow, sheep and goat's milk, or a combination of two of the three milks. This is a PDO (Protected Designation of Origin) cheese, thus requiring fairly specific standards of manufacture. Superb with bold red wines, dried fruit and charcuterie.
